1. Grater board that pursues the original spiciness of wasabi
The taste and aroma of wasabi can vary depending on the equipment and method used to grate it.
The finer the grate, the more ``allyl mustard oil'' that gives wasabi its spiciness and flavor will react with oxygen and come out.
In order to bring out the original spiciness of wasabi, it is necessary to bring out more of this ingredient.
It is said that shark skin is suitable for making wasabi, but Haganezame is a grating board that allows you to maximize the fineness of the wasabi.
2. Developed by a long-established wasabi shop
Our company is an "Izu wasabi shop" founded in 1901.
Even after purchasing expensive wasabi, we often hear from customers that ``When I grated it at home, it wasn't spicy at all'' or ``The flavor was less than I expected.''
When I listened to the details, I learned that they use a household metal or plastic condiment grater to grate the ``honwasabi'' vertically by pressing it firmly against the grater, similar to the process used to make grated daikon radish. Learning about this problem became the impetus for development.
3. Innovative, functional and unique design As you can see, the pattern on the etched side (grated side) has the letters ``wasabi'' arranged in an array.
Before settling on this shape, we made hundreds of prototype designs of circles, triangles, squares, letters and patterns, sizes, and arrangements.
As a result, strangely enough, the hiragana character ``wasabi'' was the best, and I was very surprised, thinking, ``After all, it's the character for wasabi for wasabi!''
The grating surface is a square with a length and width of approximately 75 mm, which is the area that allows you to draw an ideal circle when grating the wasabi.
In order to reduce the pressure when pressing too hard when grating real wasabi, we have adopted a 1mm stainless steel plate with elasticity in mind.
